Though invented in Tang/Song Dynasty China, matcha has become known worldwide as the foundation of the Japanese Tea Ceremony and the pinnacle of Japan\'s tea culture. Traditional Japanese matcha is crafted by grinding shade-grown green tea leaves (known as tencha) in a stone mill to create a superfine powder. The shade-growing process forces the tea plants to boost production of chlorophyll, theanine, and many other compounds to cope with the lack of sunlight. The result is an intensely vegetal and umami flavor with a vibrant green color.
