Unico is our 100% Picual, born from grafting onto a wild Sicilian olive tree. It is an early harvest extra virgin olive oil built for green intensity and precision: tomato leaf, freshly cut grass, green almond, and green banana, with hints of artichoke and aromatic herbs. On the palate it is full and consistent, with firm yet harmonious bitterness and spiciness, finishing long, clean, almondy, and pleasantly balsamic.

Harvest & Milling

  Harvest: early season, hand-picked from the family groves in Sicily

  Milling: processed quickly after harvest at the estate olive mill; cold extraction with close temperature control

  Filtration: filtered

  Storage: stored in stainless steel under a protective atmosphere; reseal after use and keep in a cool, dry place away from heat and light

  Bottling: dark green glass to best preserve freshness

  Taste: full and structured with firm, harmonious bitterness and spiciness (arugula, green pepper). Long, clean finish: almondy and lightly balsamic.

Recommended Usage

Perfect with tomatoes, artichokes, grilled vegetables, legumes, blue fish, and white meats. Excellent raw for finishing, and also outstanding in cooking thanks to its high smoke point.
