A three generation Laguna family production, ensures that traditional methods are blended with modern technique to create a perfect balance between new and old, art and science to achieve maximum results. Harvested by hand and then transferred to the mill, where the olive\'s are pressed. They are then malaxed (churned) at 28 degrees Celsius for under an hour to achieve maximum organoleptic attributes in the olive oil. keeping the temperature down and the time spent leaving the oil in contact with the paste, is one of the unknown factors that truly enhance the flavors of extra virgin olive oils.
